Project Recipe Book: Eat Dirt Dessert

Eat Dirt Dessert!

I put together this layered dessert last year for a Halloween party in an effort to serve something slightly more sophisticated than the other sweet treat that was also on the menu (more about that dessert tomorrow haha).  It was a huge hit and I have awarded it the honourable distinction of being the only Frightening Fare I make throughout the year that gets to wear its Halloween costume regardless of the occasion. 🙂

There are four main layers to this dessert – all of which can be changed to suit the your preferences or the ingredients you have on hand.  The fruit layer can be easily swapped for a variety of fresh or frozen fruit, such as blueberries, blackberries, raspberries and peaches.  For the pudding layer, I use a thick vanilla custard that I make myself, but alternatives can include vanilla or chocolate pudding, rice or tapioca pudding – really, any sort of pudding, or even a thin cake – as long as it can support the top layers, it will work.

place the cookies in a food processor and pulse to form crumbs

in individual bowls layer the following ingredients from bottom to top:
